Playdough, a few natural materials (sticks, shells, etc) and googly eyes - that's already a recipe for fun!

Summer Song picture book from A Day In The Life Of A Kid series, has this great, inspiring page with crafts for kids (and an amazing kids song, that all kids love to dance to) and suggestions on how to make them at the end of the book.

This time, my own kids decided to keep the concept, but create the crafts in an even easier style, for youngsters!
